Awesome Akki Rotti

Akki rotti is a speciality of Karnataka and I make it as a tiffin.



Ingredients:

Rice flour - 2 cups
Onion chopped fine - 1 Big
Green Chilli - 1 Big chopped into very fine pieces
Oil - 1 tsp
Salt - as much as needed
Coconut grated - 1 table spoon

Preparation:

1. Mix rice flour, onion, salt and green chilli to the rice flour and mix it with water to a thick flour like that for making murukku or idiyappam. See below...

2. Add oil and coconut to the paste and mix thoroughly.
3. In a pan or a plain tava, flatten the flour prepared by patting with your fingers. Touch a lill water/oil for patting it easily.
4. Add 1 tsp of oil around the flour after you have patted it to the whole pan. This is like you do for dosa.
5. Put the pan in medium to high flame but keep it closed with a plate to make it faster.
6. If you want it crunchier, you can turn it on the other side and leave it open in the pan for 15 seconds and then remove it from flame.

Ready is the Akki rotti, eat it along with ghee/butter and a pickle (Lemon/Mango), the best combination!!! :-)

Hint: You can also fry the onion and chilli in a separate pan with oil (you can add mustard seeds also in the beginning) and then mix it along with the flour.

Hint!!! : You can also make this along with grated carrot which makes it more tastier!
