Superb "See.." Koottu

So here is the see koottu, whatz special in this koottu... well it's different, thatz special...I love it with carrots, this one is not very hot yet spicy and wonderful!!! And it's nutritious and good for health too... By the way "See.." in kannada means sweet...

Ingredients:

Vegetables that can be used are Carrot/Cabbage/Seeme badnekaai (Chowchow) - Chopped (small, carrots as cubes)
Moong dal - 1 tea cup
Mustard - 1 tsp
Asafoetida (Hing powder)- 2 tsp
Turmeric powder - 1 tsp
Oil - 1 tsp
Corriander leaves - few
Curry leaves - few
Salt - as much as needed

For grinding:
Coconut - 1 table spoons
Green chilli - 2
Jeera - 6 tsp
Rice (soaked in water) - 2 tsp

Preparation:

1. Boil moong dal along with water, 1 tsp of oil, turmeric powder and the chopped vegetable in a pressure cooker for 2 whistles or in a closed microwave oven in high for 20 minutes.
2. Grind all the ingredients mentioned above as a coarse paste
3. After the dal and the vegetable is boiled completely, add it in a vessel, add the ground coarse paste and salt to it and bring to a boil again.
4. Make sure you don't leave it for too long as it may get burnt as it's a little thick mixture.
5. In a separate pan, add oil and mustard. Let the mustard sputter and then add asafoetida and then curry leaves and remove from the pan.
6. After the mix starts boiling, add the oil with the mustard and then remove from the heat.

This will be a little thick and can be eaten along with rice or dosai/chapathi. It's nutritious and very quick to make!
